Baking is a way of cooking food using dry heat in an oven. The heat makes dough and batter change into bread, cake, biscuits (biskuti), and other foods. In Kenya we bake things like mkate (bread), keki (cake), buns, and scones.

Ingredients- 1 cup plain (wheat) flour
- 1 cup sugar
- 2 eggs
- 1/2 cup milk
- 1/4 cup butter or margarine (soft)
- 1 tsp baking powder
- 1 tsp vanilla essence (optional)
- Preheat the oven to 180ยฐC. Grease a small cake tin or line with baking paper.
- Beat butter and sugar until light. Add eggs one at a time.
- Stir in flour and baking powder, then add milk and vanilla. Mix to a smooth batter.
- Pour into the tin and bake for 25โ30 minutes until golden. Test with a clean stick โ it should come out clean.
- Let the cake cool before cutting. Enjoy with tea or fruit.
- Baking uses less oil than frying, so baked foods often have less fat.
- Some vitamins can be reduced by heat, but energy (carbohydrates) and protein stay useful.
- Add fruit (like bananas or mango) to cakes to increase vitamins and fibre.
